Sustainability refers to all those activities that are put forward to satisfy the wants of the current generation without endangering the capability of the future generation from achieving their individual stipulated requirements. However, sustainability in the foodservice industry is directly associated the efficiency of water and power, utilization of green building materials, heating, ventilation and air conditioning, accountable acquisition of sustainable food commodities with a higher focus on native buying, food processing, covering, selling and also recycling of material and waste management.
As professional foodservice employees, chefs can develop a positive environmental change by coming up with a better waste management plan that reduces the production of garbage. According to Desita (19, May 2018), good waste handling is much associated with the management of the inventories. Once restaurants approximate, purchase and stock the exact quantities of the products they require at a particular time, they give out lesser garbage. Additionally, the chefs can request the suppliers to reduce the packing and the procurement of goods and supplies (Foodbuy, 29 April 2019). All of these ways will aid in lowering the amount of trash that the chefs produce alongside having outrageous amounts of finances.
Additionally, chefs can opt to grow their own vegetables, herbs, and fruits in their private orchards or rain farms to reduce the buying, transport, and logistics and the stocking cost. Through these initiatives, the chefs will have beautified the native environment and prevented the occurrence of runoffs to the local water bodies (Desita, 19 May 2018). Chefs can support the native economy by buying seasonal fresh food immediately from the area farmers and societies. This initiative aids in sustaining farms, dairies, vineyards, and other food suppliers as well as saving finances on packaging, transportation, and stocking and increase consumer satisfaction by providing fresh farm food products.
